Ross Omelette
Breakfast.....Lunch....or Dinner...there is never a wrong time for the Goans to gorge on some warm fluffy omlettes doused in plenty of chicken curry. Ross omelette as delicacy is generally known is an omelette cooked on a extremely hot huge griddle with onions and chilli and topped with a lot of chicken curry garnished with some chopped onion, coriander leaves and lime wedges. Ross omelette is available at almost every street side cart or stall around Goa...this is quite popular among the locals.

Ingredients 

2 tablespoons Oil

1/3 cup Onions(finely chopped)

Salt,to taste

1 teaspoon Ginger garlic paste

1/4 teaspoon Turmeric powder

1 Tomato (chopped)

1/2 teaspooon Red chili powder

2 tablespoon Fresh coconut paste

1/4 tea spoon Garam masala powder

2 Eggs

1/4 tea spoon Pepper powder

1 tea spoon Green chilies (chopped)

1 tablespoon Coriander leaves (chopped)

Method
  1. Heat oil in a pan, add finely chopped onions, salt and saute it for 2 minutes.
  2. To it, add ginger garlic paste, turmeric powder, tomato, red chili powder, little salt and saute it, later place lid cook it with closed lid for 2-3 minutes.
  3. Remove lid, add fresh coconut paste, garam masala powder, little water and cook with the lid on it, Later switch off the flame.
  4. Take a bowl and add eggs, pepper powder, green chilies, coriander leaves, salt and beat it.
  5. Heat 1 tablespoon oil in a pan, pour beaten eggs and cook it on both sides.
  6. Take a serving bowl and pour cooked ros and place omelette and serve it.
